One of the few popular Onomichi-style ramen restaurant in Onomichi. Since it was just a day trip, we didn’t have time to try all the top ramen spots. So, we decided to go for the most popular rated and conveniently located one on based Tabelog.

Kakuni Ramen Gyoza Set (¥1250 + ¥320)

Broth: Shoyu-based broth — light yet deeply savoury, with a rich umami flavour and a touch of sweetness, complemented by notes of fish and pork.

Checked their website (via Google Translate), and they mentioned a mix of fish, chicken, pork bones and seabura (pork back fat), along with vegetables, plus the use of two types of shoyu for added depth. I guessed we did taste out half of the ingredients correctly!

Meat: A few pieces of braised pork belly — just shy of melt-in-your-mouth, but still incredibly tender and soft, making it easy to enjoy.

Other toppings include an almost perfectly runny egg (always a good thing!), crunchy bamboo shoots, fresh spring onions, crisp bean sprouts, and seaweed.

Noodles: Flat and firm noodles with QQ bounce texture when bite into it.

Overall: A decent bowl of ramen with the highlight being the broth — savoury, umami, and brings out the taste of the sea.

From what we observed, it's pan-fried on one side while the other remains soft, almost as if it were steamed or lightly boiled — reminiscent of the soft and chewy texture of a Xiao Long Bao (XLB) skin.

Overall: It’s decent if you just want a side to your ramen.
