Takoyaki Yamachan - Crispy on the outside and very melty on the inside

Takoyaki, a must-try street food when you’re in Osaka and Takoyaki Yamachan is one of the famous stalls for it!
Takoyaki - 10 pieces (¥700) [Visited in November 2019]
We ordered half-half of Best (no seasoning) and Regular (sauce + dried seaweed flakes), so we could also try the original taste of the batter.
Piping hot when we receive it and first bite into the ball, we can feel the crispiness on the outside and very melty on the inside.
Outside: It has the proper structure on the outside, very crispy. Not like some of the not so good takoyaki which is too soft and doesn’t really hold a proper structure (not crispy).
Inside: Very melty and creamy on the inside, quite flavourful and savoury (salty and subtle sweetness). Apparently from what I gather online, they have their own special stock to make the batter. Long stew mixture of chicken broth, kelp and bonito soup, and various vegetables. No wonder, we feel the batter is more umami feel compared to others. Last but not least, the octopus is fresh and chewy.
On hindsight, we should have addon negi (spring onions) topping. Next time we will definitely do that!

Takoyaki - 10 pieces + Large Negi (¥870+¥150) [Visited in November 2022]
This time round we tried a total different combination compared to our 2019 visit. We ordered half-half of Sour Plum Sauce & Mayonnaise and Karakuchi (Soy Sauce & Seaweed), and a large portion of Negi on top.
Still piping hot when we receive it, but (yes, here comes the but), it wasn’t the wonderful crispy exterior skin and melty internal from our 2019 visit.
Outside: It is just a slight crispy, not much structure (as in not standing tall and round), and like just melt down when touch/move around.
Inside: The taste is still about the same as our 2019 visit (read above rating), but the inside feels not cooked properly (or long enough), still can feel batter. Probably that’s why it is also not crispy enough too?
Overall, this is a big drop in standard, thus we are deducting 0.5 star from the initial 2019 rating. Not sure is this a one-off bad night for them, or a change in cook(s) which are not as good as prior, or both. Sadly, we didn’t have time to go for a 2nd visit in our 2022 trip.

Overall
The location might not be in the most mainstream place, but definitely not off the track in Osaka city.
It is located just beside Tennoji Station and Abeno Harukas, which probably most visitors will also put in their itinerary.
The quality of the takoyaki is worth it to travel over there to try, but with the condition as long you are also in the area for other sightseeing or activities.
