Chef Choo Signature is the 2nd stall we tried on our visit to Golden Mile Food Centre last Saturday, the 1st was Ashes Burnnit as per our previous post.
So…does the food lives up to the reputation of an ex 5-star hotel chef?

Sizzling Seafood Spaghetti - Portion for 2 (S$13.9)
At first sight, I was expecting more ingredients and tomato sauce for a portion for 2. (It only came with 2 of each on mussels, clams, prawns, and a few pieces of squid)
But I digress, let’s move on to the food.
It came on a cast iron skillet, thus probably the “sizzling” part to their dish name from the sound and sight when you first receive it.
Pasta: Cooked al dente which is how I like my pasta.
Ingredients: The seafood (prawns, clams, mussels, and squid) is fresh and cooked well.
Taste: Freshness and umami from both the tomato paste and seafood infuse into the pasta, but it is quite subtle. If only the taste is more pronounced it will be so much better.
Overall, definitely better than most generic western stalls in hawker, but nothing outstanding.

Thoughts
Not sure whether this is their usual standard or we should taper our expectations.
This is my gut feel, we might not be getting the usual standard for this dish from the look of the quantity of the ingredients, tomato sauce, and cooking due to the surge of customers and the possibility of not enough ingredients for this dish.
